Procedure Of Serving South Indian Meal

The serving of the dish begins by plating a banana leaf on the table, which is also known as vazha ilai. (yes, you guessed it right, banana leaf is used as a plate in the southern region). Before placing the banana leaf, it is thoroughly cleaned and washed. Apart from that, the banana leaves are also tapered, and the size of the leaf might vary according to the need and the culture of the community. Each community has a different view of such an extensive serving process. The small leaves are generally used for lighter meals or tiffins, whereas the larger ones are for a huge feast.

After the leaf is placed, the server drops some payasam (vermicelli pudding) on the right side, then the whole serving of the food begins. Starting from pacchadi (raita), along with some curries and the pickles. The heavier food items are generally served on the left-hand side, including vada( fried savory snack), mixed rice like coconut rice, lemon rice, tamarind rice, etc., and sweets like pineapple sheera.

After the side dishes are appropriately served, the main course presents their presence. They serve food items like rice and ghee(clarified butter) dal (lentils) like Kerala Parripu, sambar, and rasam.

To end the meal with the dessert -moong dal payasam is served in a bowl made out of the banana leaf. Along with the dessert, curd rice and buttermilk are also followed.
